Even though pressure cookers are a great choice to have in the kitchen, thinking of new and exciting meal ideas can be daunting. That’s why we have gathered together 7 of our favourite pressure cooker recipes for you to try.

Middle Eastern Lamb Pilaf

Middle Eastern Lamb Pilaf

This traditional Middle Eastern dish is packed with flavour and made super simple with our Multi Pressure Cooker. Traditionally found in Afghanistan and Uzbekistan in particular, this deliciously aromatic one-pot meal is easy to cook.

Ingredients

300 g basmati rice
Oil
1 onion
500 g lamb mince
6 garlic cloves
1 tsp cumin
2 cardamom pods
1 cinnamon stick
400 ml vegetable stock
100 g dried apricots
70 g honey roasted cashews
Salt and pepper

Herb dressing

1 ½ garlic cloves
15 g fresh coriander
¼ tsp ground cardamom
⅓ tsp ground cumin
75 ml extra virgin olive oil

Instructions

Soak the washed rice for 15 minutes while you prep and cook the vegetables and lamb.
Select Saute, and add some oil to the inner pot. When hot, add the diced onion and saute until soft.
Add the lamb mince and cook until browned. Then add the garlic, spices and drained soaked rice, and saute for 2 more minutes.
Add a generous pinch of salt to the inner pot along with the stock, this should cover the rice mixture.
Cancel the Saute function and secure the lid with the pressure cooking cover in place.
Select Pressure Cook and set the time to 3 minutes and choose natural pressure release.
While the lamb and rice cooks, combine all the herb dressing ingredients then season with salt and pepper and set aside.
After 18 minutes of natural release, quickly release the remaining pressure then open the lid.
Stir the lamb pilaf, season to taste and add the diced dried apricots and herb dressing. Top with the honey roasted cashews and serve.

Butter Chicken

Butter Chicken is one of the most popular Indian dishes in the world. Our one-pot version is bursting with flavour and sure to be a crowd-pleaser. Featuring a rich creamy curry sauce with aromatic flavourings, this dish is simple yet impressive.

1 tbsp oil
1 medium onion
2 tbsp garlic and ginger paste
1 tbsp garam masala
1 tsp chilli powder
1 tsp fenugreek powder or seeds
1 tsp cumin
4 tbsp tomato paste
300 g boneless
400 g tin chickpeas
250 ml cream or yoghurt
1 tbsp butter
Salt and pepper

Pot In Pot Rice

220 g
250 ml/1 cup water
½ tsp salt
To serve

Instructions

Select Saute on the Instant Pot and add the oil and diced onion.
Saute for 2-3 minutes until softened, then add the garlic and ginger paste. Saute for another minute while stirring.
Add all the spices and saute for 1 more minute, then add the tomato paste and 1 cup/250ml water and give everything a stir.
Add the chicken breast and chickpeas, using a spatula to ensure the chicken sits in an even layer, but do not stir it too much, and press cancel.
If making pot in pot rice, mix the rice, water and salt in a suitably sized bowl, and then place this on the long-legged trivet into the inner pot.
Secure the lid and select pressure cook, setting the time to 5 minutes. Once cooked, allow the pressure to release naturally for 7 minutes, then quick release any remaining pressure.
Open the lid, remove the bowl of rice, and fluff with a fork.
Give the butter chicken a mix then stir through the cream/yoghurt and the butter. Season to taste with salt and pepper.
Serve immediately with the rice, plus naan or roti.

White Lasagne Soup

White Lasagne Soup

This hearty dish is a new take on a well-loved classic. Creamy and rich, this simple to make one-pot dish is the ultimate comfort meal.

Ingredients

1 onion
1 tbsp oil
15 g porcini mushrooms
500 g turkey thigh mince
2 garlic cloves
120 ml white wine
2 L chicken stock
5 sheets lasagne
1 tsp chilli flakes
1 tbsp picked thyme leaves
150 ml double cream
60 g Parmesan
1 ball Mozzarella
60 g pesto to serve

Instructions

Select sauté on the Instant Pot, and set the time to 6 minutes. Add the onion and oil, and cook until the onion is soft and beginning to colour.
While the onion cooks, pour 200 ml of boiling water over the porcini and set aside.
Add the turkey mince to the Instant Pot, and brown the mince all over. If liquid accumulates while the mince is cooking, lift out the inner pot, tip out the liquid (reserve it) and continue browning the mince.
Once brown, add the garlic and cook for 1 more minute
Add the white wine and continue sautéing for a further 2-3 minutes, until the alcohol has cooked off. Add the stock and porcinis in their liquid into the pot and press cancel.
Deglaze the base of the inner pot, then secure the lid. Select pressure cook and set the time to 20 minutes.
When the cooking program finishes, perform a quick pressure release and remove the lid.
Roughly break 5 lasagne sheets into the pot, then add the thyme and chilli flakes.
Secure the lid, select pressure cook, and cook for 1 minute at high pressure. Make sure the keep warm function is selected.
Once cooked, perform a quick pressure release.
Test the pasta sheets-they should be just al dente at this point. Finally, stir in cream, and parmesan, and season to taste with salt and pepper. Select cancel, set the instant pot to saute on a high heat and warm the soup through.
Ladle the soup into bowls. Tear and divide the mozzarella between the bowls and top with pesto. Garnish with more chilli flakes if desired. Serve immediately.

Moussaka

Our take on the well-loved Greek dish is an instant crowd-pleaser. With our Multi Pressure Cooker, it can be cooked entirely in one pot making mealtimes quick and easy.

Ingredients

1 tbsp olive oil
1 large onion
2 garlic cloves
450 g lamb mince
125 ml water
400 g can chopped tomatoes
2 tbsp tomato paste
1 tsp ground cinnamon
½ tsp salt
½ tsp freshly ground black pepper
1 medium aubergine
150 g feta
1 large handful of fresh mint
Salad and warm toasted pitta to serve

Instructions

Press the sauté button on the Instant Pot and leave to preheat.
Once the display says HOT, add the olive oil.
Add the onion and garlic cloves and sauté until soft, stir regularly.
Add the lamb and cook for 10 minutes until browned, stir occasionally.
Drain off the mince, add the water, chopped tomatoes, tomato paste, cinnamon, salt and pepper, then deglaze the base of the inner pot.
Secure the lid, and select Pressure Cook on high for 10 minutes.
When Instant Pot beeps, allow 5 minutes of natural pressure release, then quick release the remaining pressure.
When the pin drops, open the lid. Press cancel.
Press the sauté button on the Instant Pot then stir in the cut aubergine.
Cook for a few minutes until soft.
Serve sprinkled with feta and fresh mint on top, and salad, and warm toasted pitta on the side.

Sticky Toffee Pudding

Sticky Toffee Pudding

Gorgeously rich, this pressure cooker sticky toffee pudding is a must-try. Deliciously moist and comforting, served with ice cream or cream for the perfect after-dinner treat.

Ingredients

7 large medjool dates
100 ml hot water
2 tbsp bourbon
1/2 tsp baking soda
3 tbsp butter
2 tbsp milk
100 g flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
Pinch of nutmeg
1 egg beaten
360 ml water
100 ml caramel sauce
Ice cream or cream

Instructions

In a small bowl, combine dates, hot water, bourbon and baking soda then set to one side.
In another bowl, combine the butter and milk, and microwave on low until the butter is melted.
Add flour, baking powder, cinnamon, salt and nutmeg to the milk/butter mixture, and stir to combine. Then add the beaten egg and bourbon-date mixture, and mix together.
Coat the insides of four ramekins with non-stick spray and divide the batter evenly amongst the ramekins, and cover each ramekin with foil.
Place the steam rack/trivet into the inner pot and pour in the 360ml water. Arrange the ramekins in a pyramid formation – three on the bottom and one on the top, then secure the lid.
Select Steam function* and set the time for 20 minutes, and press Start.
When the cooking program finishes, let the pressure naturally release for 10 minutes, then quick-release the remaining pressure.
Carefully remove the ramekins from the pot. Run a knife around the edges to loosen, then invert onto a serving dish.
Use a cocktail stick to pierce holes into the top of each pudding then pour the warm caramel sauce.
Serve with your choice of cream, ice cream or more caramel sauce!

Sticky Toffee Pudding

Chocoflan

This combination of a gorgeous chocolate cake and creamy flan creates an impressive dessert. Utilising the steam in our Multi Pressure Cooker for a one pot dessert

Ingredients

45 ml Caramel or toffee sauce

For the flan:

160 g evaporated milk
175 g condensed milk
50 g cream cheese
1 egg and 1 egg yolk
½ tsp vanilla
Pinch of salt

For the Cake:

15 g cocoa powder
30 g butter
60 ml hot coffee
20 g brown sugar
30 ml evaporated milk
½ tsp vanilla
90 g flour
½ tsp Baking powder
¼ tsp bicarbonate soda
¼ tsp vinegar
Pinch of salt

Instructions

Coat a 18 cm Bundt tin with a little melted butter, then drizzle the base of the tin with toffee sauce.
Add all the ingredients for the flan mixture into a blender and blend for 30 seconds until well combined.
Make the cake mixture by adding the cocoa powder, butter and boiling hot coffee to a mixing bowl. Stir the mixture until the butter has completely melted and the cocoa powder is incorporated. Whisk in the sugar, vanilla and milk until smooth.
In another bowl, sift together the dry ingredients, then add these to the wet ingredients, then mix until just combined and no lumps remain (do not overmix)
Pour the cake batter into the prepared tin, then pour over the flan mixture. Cover the middle hole of the Bundt tin with tin foil, and then wrap the whole bundt tin in another layer of foil.
Pour 1 cup of water into the inner pot, then add your trivet into the base of the pot with the Bundt tin on top.
Select Pressure cook and set the time for 14 minutes and press start.
When the cooking program has finished, let the pressure release naturally for 6 minutes, then quickly release the remaining pressure.
Place the chocoflan in the fridge to chill for at least 4 hours, but preferably overnight.
Unmould onto a plate, drizzle with more caramel sauce, if you wish, then serve.

Notes

It is important to use a 7 inch/18cm tin for this recipe- you are welcome to test it with other tins, but cooking times may vary.

Peanut Butter Molten Cakes

Peanut Butter Molten Cakes

Fudgy, rich and warm, these molten cakes have a surprise peanut butter filling. These are the ultimate dessert and are made easy with a pressure cooker. 

Ingredients
  • 110 g butter
  • 200 g chocolate chips
  • 100 g sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 65 g unsweetened cocoa powder
  • 65 g plain flour
  • 1/2 tsp kosher salt
  • 4 tbsp peanut butter
  • 250 ml water

Instructions

  1. Grease four ramekins with butter.
  2. In a microwave-safe bowl, combine butter and chocolate chips and heat in 30-second intervals until melted.
  3. Add sugar, eggs, egg yolks, and vanilla and whisk until smooth, then add cocoa powder, flour, and salt and whisk until just combined.
  4. Fill ramekins halfway with batter, then top each with 1 tablespoon (heaping) of peanut butter. Top with remaining batter. Cover ramekins tightly with foil.
  5. Place the trivet inside Instant Pot and pour in the water. Place three ramekins on the trivet and stack the fourth one in the centre on top.
  6. Secure lid and select Pressure Cook for 20 minutes. When the cooking program has finished, perform a quick pressure release.
  7. Using tongs, carefully remove ramekins from Instant Pot, uncover them and run a knife or offset spatula around edges. Invert each ramekin onto a plate, then dust with additional sugar before serving.
