500g beef mince
30g white breadcrumbs
60ml beef stock
1 white onion, chopped
2 tsp curry powder
1 tsp turmeric
1 tsp ground cumin
1 tsp salt
1 tsp black pepper
2 tbsp apricot jam
2 carrots, shredded
240ml whole milk
2 eggs
4-5 fresh bay leaves (for garnishing)


1. Preheat your air fryer to 180° Celsius for a few minutes.
2. Get an air fryer-appropriate dish and place the beef mince, diced onion and shredded carrot in it.
3. Place into the air fryer and cook for 10 minutes, use a spatula to stir half-way.
4. After 10 minutes, pour out any meat juice and mix in the breadcrumbs, stock, curry powder, turmeric, cumin, apricot jam, salt and pepper.
5. Stir everything together, then pat down with a spatula so it is level.
6. Preheat your air fryer to 160° Celsius for a few minutes.
7. In a large bowl, beat together the milk, eggs, salt and pepper (to taste).
8. Add the egg and milk mixture on top of the beef mince mixture.
9. Add the bay leaves on top.
10. Place in the air fryer basket and cook for 20-22 minutes, or until the top is golden brown.
11. Once the Bobotie is ready, serve hot.
