6 raw duck legs
1/3 cup salt
Spice Mix
6 coriander seeds
6 black peppercorns
“Alternatively: if you dont have a pestle and mortar; Use 1 Tsp mixed spice or Chinese 5 spice”
Zest of 3 oranges

For the braise
1 cup chicken stock
1/2 onion, sliced
2 star anise (optional but reccomended)
1 tsp coriander seeds
1 orange, sliced
1-2 tsp cornflour mixed with water (for sauce)


  1. In a large bowl, combine the salt with the duck legs, ensuring the legs are properly coated and leave to cure for 30-60minutes.
  2. Slice the onion and zested oranges thinly, then lay them in a roasting dish suitably sized for your air fryer basket. Drizzle over a little cooking oil. and add the spices.
  3. Grind together the bay leaves, coriander seeds, black peppercorns, and orange zest into a paste and add to the roasting dish.
  4. Add the duck legs, skin side up, then add the stock. The stock should cover the legs, but not submerge them completely, a little of the skin should be peeping out the liquid.
  5. Cover the dish with foil and roast the duck legs at 155°C for 1 hour. Uncover after 30mins and top up with liquid. Once cooked, It should be lovely and soft.
  6. Remove the legs from the liquid and strain the stock, then add to an Instant Pot or saucepan, with the cornflour/water mix and Saute until thickened.
  7. “If you want to crisp the skin of the duck, preheat the air fryer to grill. Place the legs directly into the air fryer basket and grill for a few minutes until you have a desired crispy result- keep an eye on them! Once cooked allow the duck to rest in the warm basket while you make the sauce.”
  8. Once the gravy is thickened, plate up the duck legs with your favourite sides before drizzling over the sauce.
