Back-to-School Meal Prep Ideas

Published On: September 3, 2026

Once the school routine starts again, having a few things prepared in advance can make a big difference to busy weekdays.

Your Instant Pot can help with much more than evening meals. Use it to prepare breakfast staples, lunchbox ingredients, family dinners, snacks and freezer favourites, so there is less to think about when the week gets hectic.

Here are a few ideas to get ahead.

Batch-Cooked Family Dinners

For evening meals, choose dishes that are worth making in a larger quantity.

Beef stew, chicken casserole, sausage hotpot, lentil dhal and slow-cooked pulled pork are all good options for feeding the family with enough left over for another day.

Cooking a larger batch means one evening’s dinner can also cover a second meal later in the week, without doubling the effort.

Freezer-Friendly Meals

The freezer is useful for the meals you want ready for particularly busy days.

Try making batches of homemade meatballs, cottage pie filling, chicken tikka, vegetable curry or bean chilli and freezing them in family-sized or individual portions.

You could also freeze smaller portions for older children who come home at different times because of clubs or activities.

Label everything before it goes into the freezer and you’ll always know what is ready to use.

Make Lunchboxes More Interesting

Meal prep can take some of the morning pressure out of packed lunches too.

Use your Instant Pot to cook boiled eggs, corn on the cob, chickpeas, quinoa or chicken breasts ahead of time. These can then be used alongside fresh fruit, cheese, crackers, vegetables and dips to create different lunch combinations throughout the week.

You could also make homemade egg bites for an easy protein-packed addition to a lunchbox.

The idea isn’t to prepare five complete lunches in advance, but to have a few useful ingredients ready to grab.

Don’t Forget Breakfast

Busy school mornings can make breakfast feel rushed, so this is another area where preparing ahead can help.

Instant Pot porridge can be portioned into containers and reheated in the morning, with different toppings added each day such as berries, banana, apple, cinnamon, honey or nut butter.

You can also prepare hard-boiled eggs in advance for a quick breakfast with toast, fruit or yoghurt.

Having one or two breakfast options already sorted can make mornings run much more smoothly.

After-School Snacks

After-school food doesn’t always need to be another full meal.

Try making homemade hummus from cooked chickpeas, egg bites, steamed sweetcorn or a batch of cinnamon apples to serve with yoghurt.

For something more substantial, quesadilla fillings or pulled pork can be prepared ahead and turned into a quick snack when everyone gets home.

Keeping a couple of filling options ready can be especially useful on days when dinner will be later than usual.

Make the Most of Weekend Prep

You don’t need to spend hours preparing every meal for the week.

Choose a few things that will genuinely save you time, perhaps one family dinner, a freezer batch, some boiled eggs and a breakfast option.

Your Instant Pot can take care of much of the cooking while you get on with other jobs, leaving you with a fridge and freezer that are a little better prepared for the school week ahead.
