Ingredients
- 200 g raw beetroot, or sweet potato peeled
- 150 g raspberries
- 130 ml chicken bone broth
- 4 gelatin leaves (Dr. Oetker leaf gelatin)
- 3 tsp chia seeds
Instructions
Pour 1 cup of water into the Instant Pot and insert the trivet. Cut the peeled beetroot into chunks and place them onto the trivet. Secure the lid and pressure cook on High for 12 minutes, then quick-release.
While the beetroot cooks, soak the 4 gelatin leaves in cold water until fully softened.
Warm the bone broth in a small saucepan until hot but not boiling. Remove the gelatin from the water, squeeze out excess liquid, then add it to the hot broth, stirring until completely dissolved.
Transfer the cooked beetroot to a tall jug or blender cup. Add the raspberries and pour over the warm bone broth and gelatin mixture. Using a stick blender, blend until very smooth and fine.
Stir through the chia seeds then pour the mixture into silicone moulds and refrigerate for 1–2 hours, or until fully set.
Notes
Age suitability
Suitable from 6 months+, once baby is developmentally ready for solids. These gummies should be soft-set, not chewy. Always supervise eating.
Serving suggestions & sizing by age
For spoon feeding (around 6 months)
Before setting, reserve some of the blended mixture and serve as a thick purée, with or without chia, for babies who are not yet confidently self-feeding.
For baby-led weaning (around 6–8 months)
Use large, graspable moulds, approximately 4–5 cm long and 2–3 cm wide. Gummies should squash very easily between two fingers and be designed for sucking and gumming rather than biting.
For older babies (around 9–12 months)
Offer medium-sized gummies (around 2–3 cm). At this stage babies can manage smaller soft pieces, provided the texture remains very tender.
For toddlers (12 months+)
Smaller bite-size gummies (around 1.5–2 cm) are appropriate, still soft and supervised.
Storage notes
Store in an airtight container in the fridge for up to 3 days. Best served chilled. Freezing is not recommended as it alters the gelatin texture.
Further Notes:
Using 4 gelatin sheets creates a firmer set that holds its shape well, but gummies should still feel soft and yielding. If they become rubbery, reduce gelatin slightly or increase liquid next time.
Adding a small amount of citrus juice improves flavour and supports iron absorption from beetroot.
