Ingredients

  • 1/2/80g cup sweet potato
  • 1/4 head broccoli
  • 500 g chicken thigh mince
  • 50 g  cheddar, gruyere, or gouda
  • Zest of 1 lemon, optional
  • 5–6 g fresh parsley, finely chopped, or 1/2 tsp mixed dried herbs
  • 1 tbsp chia seeds

Instructions

Add the water to the Instant Pot and insert the trivet. Peel dice the sweet potato into 2cm cubes, place on the trivet, and pressure cook on High for 9 minutes. Quick release and transfer to a bowl.

Place the broccoli on the trivet and pressure cook on High for 4 minutes. Quick release and add to the bowl. Mash the sweet potato and broccoli.

Add the chicken mince, cheese, lemon zest if using, parsley or herbs, and chia seeds. Mix well and rest for 15 minutes to allow the chia to hydrate and firm the mixture.

Portion into tablespoon-sized balls, flatten gently, and cook in an air fryer at 200°C for 5–8 minutes or bake in the oven for 8–10 minutes until cooked through.

Cool completely before serving or storing.

Suitable from 8 months+ when cooked through and served appropriately. Particularly well suited to 9–24 months as a high-protein, iron-containing snack or meal component.
