  • 6–8 sheets filo pastry
  • Oil or melted butter (for brushing)
  • 6 eggs
  • 1 cup milk

The exact time depends on the depth of your loaf tin: a tall tin will take longer (closer to 60 minutes), while a wider, shallower tin may set in about 40 minutes. Check doneness by inserting a skewer into the centre; tap the skewer against your lip to ensure the core is fully hot.
  7. Once set, lift the tin from the air fryer and let the loaf stand for a few minutes so it firms up. Carefully turn it out. If you’d like extra colour on the sides and top of the filo, return the loaf (without the tin) to the air fryer at 180°C (355°F) for 6-7 minutes until crisp and golden.
