Ingredients

  • 360g of frozen chicken fillets
  • 30g mayonnaise (look for ultra processed free)
  • 100g natural/plain yoghurt
  • 1 tablespoon of apricot fruit spread
  • 1 teaspoon of mild curry powder
  • The juice of half a lemon and a zest of a whole lemon
  • 2 tablespoons of chopped fresh coriander
  • 20g of sultanas
  • Salt and pepper to taste

 

Instructions

  1. Place the frozen chicken in your instant pot with 250ml of water.
  2. Pop the lid on and secure in place.
  3. Set to high pressure for 7minutes and then leave until all pressure is released i.e. NPR. Remove and shred the chicken.
  4. Leave to cool.
  5. Stir all other ingredients together with the cooled chicken.
  6. Serve between two slices of fresh sourdough bread.
