  • ½ block halloumi (about 125g), finely grated
  • 1 tsp honey
  • Pinch of chilli flakes
  • Freshly ground black pepper
  • 100g cornflakes
  • 1 egg
  • ⅓ cup plain flour

Instructions

  1. Place the goat’s cheese in a bowl and grate in the halloumi.
  2. Add the honey, chilli flakes, and a generous pinch of black pepper. Mix until smooth and evenly combined.
  3. Roll into small balls (about the size of a walnut) and place on a tray. Freeze for 15 minutes to firm up.
  4. Meanwhile, crush the cornflakes in a food processor or in a bag with a rolling pin until fine, like breadcrumbs.
