Easy Peasies

Bright, sweet and wonderfully simple. Made with just a few wholesome ingredients, these soft peas are packed with natural goodness and flavour, making them a great easy addition to everyday meals.

Ingredients

  • 100 g blanched skinless hazelnuts
  • 1 tbsp olive oil
  • 200 g bacon lardons or smoked cubed pancetta
  • 500 g frozen peas
  • Pinch of salt
  • Pinch of black pepper
  • 15 g parsley

Instructions

  1. Lightly toss 100 g blanched skinless hazelnuts with 1 tbsp olive oil. Add them to the small basket of the Instant Pot Dual Drawer 11 liter and cook at 150°C/302°F for 2 minutes. Tip 200 g bacon lardons or smoked cubed pancetta into the large drawer of the Instant Pot Dual Drawer 11 liter (no oil needed) and cook at 170°C/338°F for 5–8 minutes, until deeply golden and crisp.
  2. Set time and temperature on Side 1 and Side 2, press Sync Finish, then press Start so both drawers finish at the same time.
  3. While those cook, bring a pot of water to the boil. Salt it, add 500 g frozen peas, cook just until heated through (usually 2–3 minutes once it returns to the boil), then drain well.
  4. Roughly chop the hazelnuts (aim for chunky halves and rough pieces). Finely chop 15 g parsley.

Tip the hot peas into a bowl, then add the chopped hazelnuts and the crispy bacon, including all the rendered fat (that’s your dressing). Season with a pinch of salt and a pinch of black pepper, scatter over the parsley, toss, and serve warm.
