Steamed to perfection in the Instant Pot, they’re soft, savoury and perfectly portioned for little hands (and grown-ups too).

Ingredients
- 50 g spinach
- 4 eggs
- 1/2 cup full-fat cottage cheese (around 130 g)
- 70 g cheddar cheese (or gouda)
Instructions
Add the 50 g spinach, 4 eggs, 1/2 cup full-fat cottage cheese (around 130 g) and 70 g cheddar cheese (or gouda) to a blender and blend until completely smooth and evenly combined, with no visible flecks of spinach remaining.
Pour the mixture into a silicone egg bite mould, filling each cavity evenly. This recipe was tested using a mould where each cavity holds approximately 3 tablespoons. Secure the lid on the mould.
Pour 250 ml water into the Instant Pot insert, then place the trivet inside. Carefully set the filled egg bite mould onto the trivet.
Secure the Instant Pot lid, set the valve to sealing, select Pressure Cook (low) and cook for 5 minutes.
Once the cooking time is complete, allow a natural pressure release for 5 minutes. After this, carefully release any remaining pressure manually, then remove the lid.
Lift the egg bite mould out of the Instant Pot and allow it to cool for a few minutes. As the egg bites cool, they will continue to firm up. Once slightly cooled and set, gently unmould and serve.
Notes
These can be served warm or at room temperature and store well in the fridge for up to 2 days. They can also be frozen and reheated gently.
These egg bites are intended to be soft and moist, not rubbery. Full-fat cottage cheese helps keep the texture tender and boosts protein and fat intake for babies and toddlers.
Age suitability
Suitable from 6 months+, once baby is developmentally ready for solids and egg and dairy have been introduced safely.
