Product:
Instant Pot Multi-Cooker
Ingredients
- 500g carrots
- ½ cup chicken stock or water
- Generous pinch of salt
- Generous pinch of black pepper
- 2 tbsp butter
- 4 tbsp honey
- 8 sprigs fresh thyme (leaves picked)
Instructions
- Peel the 500g carrots, trim the tops and very ends, and choose carrots that are roughly the same thickness all the way down (this helps them cook evenly). Cut them on an angle into thick batons about 5 cm long. You want them quite chunky so they hold up well during pressure cooking.
- Place the raw carrots into the Instant Pot along with ½ cup chicken stock or water, a generous pinch of salt and pepper, and 2 tbsp butter. Secure the pressure cooking lid, set to 0 minutes on Pressure Cook, and press Start. The carrots will cook as the pot comes to pressure. The moment it reaches pressure, perform a quick release.
- While the pot is coming to pressure, pick the leaves from 8 sprigs fresh thyme.
- Once the pressure has released, remove the lid. Add 4 tbsp honey and the picked thyme leaves. Gently stir with a soft spatula — avoid vigorous mixing so the batons stay intact. Continue cooking on Sauté mode, stirring occasionally, until the liquid reduces into a glossy, syrupy glaze that clings to the carrots.
- Taste and adjust seasoning with more salt and pepper. Transfer to a serving dish and spoon any remaining glaze over the top.
Notes
These carrots can be made ahead and reheated in the microwave or kept warm in a low oven before serving. They easily serve 6-8 people as part of a larger meal.
