1 tbsp rapeseed or olive oil
1.2kg pork shoulder, cut into large chunks (4-5 pieces)
1 tbsp smoked paprika
1 tsp ground cumin
2 tsp garlic granules
1 tsp onion granules
1 tsp mustard powder
2 tsp sea salt
½ tsp black pepper
1 tbsp brown sugar
150 ml dry cider
125ml BBQ sauce
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 tbsp tomato purée
Instructions
- Mix the smoked paprika, cumin, garlic granules, onion granules, mustard powder, salt, pepper and brown sugar together. Coat the pork well in the spice rub.
- Set the Instant Pot Mini to sauté mode and add the oil. Brown the pork in batches until caramelised.
- Remove pork and add the cider to de-glaze the bottom of the pot before putting the pork back in.
- Add the BBQ sauce, apple cider vinegar, Worcestershire sauce, tomato purée
- Lock the lid and pressure cook on high for 1hr, then allow a 10 minute natural release before venting.
- Remove the pork and shred using two forks (discard any large clumps of fat, and skim some of the fat from the sauce if preferred) then stir the pork back through the sauce until glossy and coated. Sauté for ~10 minutes to thicken.
- Meanwhile, grill the sausages and corn on the BBQ
- Serve everything laid out with toppings so everyone can build their own loaded hot dogs.
