Creamy, gently spiced and full of flavour, this Mild Palak Chicken combines tender chicken thighs with a smooth spinach and coriander sauce. Warming spices, tomato, ginger and garlic create a rich curry base, while a splash of cream and lemon juice gives the finished dish a fresh, balanced finish.
The Instant Pot helps keep the chicken beautifully tender while developing plenty of flavour in a relatively short cooking time. The spinach is blended separately to keep the sauce smooth and vibrant, then stirred through at the end for a comforting curry that works perfectly with basmati rice, warm naan, or both.

Bring a large pan of salted water to the boil. Add the spinach and blanch for 30–45 seconds, until just wilted. Immediately transfer to ice-cold water. Blend until completely smooth. - Allow the Instant Pot to naturally release for 5 minutes, then carefully release the remaining pressure.
- Add the spinach
Switch to Sauté – Low. Stir in the spinach purée and gently cook for 2–3 minutes, stirring, until completely hot and incorporated. Don’t vigorously boil it. - Finish
Turn off Sauté and stir through the 75ml single cream and lemon juice. Taste and adjust the salt. If the curry is thicker than you’d like, loosen with a splash of water.
Serve
Garnish with fresh coriander, an extra drizzle of cream and serve with basmati rice, warm naan, or both.
