Ingredients

  • 7 g instant yeast
  • 10 g honey
  • 45 g olive oil (for the dough)
  • 530 ml warm water
  • 750 g strong white bread flour
  • 12 g kosher salt
  • 80–100 ml olive oil (for coating and topping)
  • 1 x 400 g tin chopped tomatoes
  • 3 garlic cloves, thinly sliced
  • 15–30 ml olive oil (for sauce)
  • 45 ml water (to rinse tin)
  • 300 g mozzarella
  • 80–100 g spicy pepperoni
  • 1–2 tsp chili flakes
  • Hot honey, to finish (optional)

Instructions

  1. In the bowl of your Instant Pot, combine the yeast, honey, 45 g olive oil, water, flour and salt. Mix with a wooden spoon until you have a sticky, shaggy dough. It will look rough — that’s fine.
  2. Set the Instant Pot to sous vide mode at 26°C. Cover the bowl with a damp towel and let the dough proof for 40 minutes, or until doubled in size.
  3. Turn the dough out onto a lightly floured surface. Use floured or oiled hands to lift and fold it over itself a few times. This isn’t kneading per se, just a quick set of folds to give it strength and make sure everything’s properly mixed.
  4. Quickly rinse out the Instant Pot, then drizzle in about 30–45 ml olive oil and swirl to coat. Return the dough to the pot, cover with a damp cloth, and set it back to sous vide at 26°C for another 40 minutes.
  5. Coat a large sheet pan (approximately 45 x 33 cm) or two smaller ones with about 90 ml of olive oil – enough to generously coat the entire surface and corners.
  6. Tip the dough into the oiled pan and gently stretch it out with your fingertips. Don’t worry about getting it all the way to the edges, it will relax and spread as it proofs. Cover loosely with clingfilm and leave on the counter for 30–45 minutes, or until puffed and airy.
  7. While the dough rises, make the sauce. Set the Instant Pot to sauté on medium, add the olive oil and garlic, and cook for 2–3 minutes until fragrant. Cancel the sauté function, add the tinned tomatoes and 45 ml water, secure the lid, and pressure cook for 10 minutes. Let the pressure release naturally, then stir or mash to your preferred texture. Season to taste.
  8. Heat your oven to 230°C fan (250°C conventional). When the dough is ready, dimple it all over with oiled fingertips and transfer the tray to the oven. Bake the bare base for 25–30 minutes, or until golden and crisp underneath.
  9. Remove the pan from the oven and spread with tomato sauce. Scatter over mozzarella and pepperoni, then return to the oven for 5–8 minutes, until the cheese is bubbling and the pepperoni is crisp at the edges.
  10. Finish with chili flakes and a drizzle of hot honey. Slice into thick squares and serve immediately.
