Ingredients

  • 300 g Plain flour
  • 2 tsp Baking Powder
  • 100 g Double Cream
  • 100 ml Sprite
  • Pinch of salt
  • 1 egg
  • Clotted Cream and jam

Instructions

  1. Cut a square of baking paper to fit inside your Vortex Air Fryer, making sure to leave a 2cm border so air can circulate around the scones . Set the baking paper aside until needed.
  2. Add the flour and baking powder to a mixing bowl. Make a well in the centre and then add the double cream and Sprite.
  3. Gently bring the dough together with a spoon, then tip it out to knead until just combined on a floured surface.
  4. Press the dough into a disk shape about 3cm thick, then use a 6cm sized cookie cutter dusted with flour to cut your your scones. Press the cutter straight down and avoid twisting for best results.
  5. Select Bake and set the temperature to 190°C and the time for 10 minutes, and press Start.
  6. When the air fryer has preheated and you are prompted to ‘Add Food’ place the scones on the baking paper inside the Vortex basket, making sure each scone is nuzzled slightly against its neighbours, who will help it rise on baking. Brush the scone tops with egg.
  7. Bake the scones for 9-10 mins or until golden and cooked through.
  8. Serve immediately with clotted cream and jam!

Tips for fluffy scone success

Do not overwork the dough, try handling it as little as possible for fluffy scones
Bake the scones next to each other, slightly touching so they can help each other rise with the additional support (go team!)
Baking powder will lose its efficiency the longer the dough sits- mix then bake for best results
Try not to touch the cut sides of the scones when transferring them, as this can effect the rise
Egg wash only the tops, and avoid the sides
