Panzanella: A Fresh and Rustic Italian Bread Salad

Panzanella is a classic Italian salad that celebrates the simple, vibrant flavours of summer. Traditionally made with stale bread, juicy tomatoes, fresh basil, and a splash of olive oil and vinegar, this rustic dish transforms humble ingredients into a refreshing and satisfying salad. Perfect as a light main or side dish, Panzanella brings a taste of the Italian countryside to your table.

To create this delightful salad, start by toasting or slightly drying out chunks of bread to ensure they absorb all the delicious flavours without becoming soggy. Toss the bread with ripe, juicy tomatoes, crisp cucumbers, and thinly sliced red onions for added crunch. Fresh basil and a dressing of extra virgin olive oil, red wine vinegar, and a hint of garlic bring everything together, infusing each bite with a burst of Mediterranean goodness.

Panzanella is versatile, easy to customise, and perfect for using up day-old bread and peak-season tomatoes. Enjoy it as a refreshing lunch, a side for grilled meats, or even as a starter at a summer gathering. With its vibrant colours and bright, fresh flavours, Panzanella is a true celebration of simple ingredients at their finest.
