Quick and Spicy Miso Ramen

Ingredients

  • 1 pack Nissin instant noodles / white ramen
  • 2 Spring onions

The stock

  • 1 kg pork bones
  • 1 pork leg / shoulder bone
  • 500g pork shoulder joint (meat off the bone)
  • 5 spring onions, roughly chopped
  • 2 thumb size pieces ginger
  • 5 dried shiitake mushrooms
  • 2 pieces kombu
  • 5 cloves of garlic

Miso Tare

  • 6 tbsp yellow Miso
  • 6 Sake
  • 3 Japanese soy
  • 2 Sugar
  • Thumbsized ginger, finely chopped
  • 4 cloves garlic, finely chopped

The Toppings

  • Soy marinated egg (in food bag)
  • 3 tbsp Hon mirin
  • 3 tbsp Japanese soy sauce (Shoyu)
  • 3 tbsp dark soy sauce
  • 6 tbsp water
  • 1 x food bag (to marinade the eggs)

Hon Mirin Chilli Paste

  • 4 tbsp Mirin
  • ½ tbsp soft brown sugar
  • 3 tbsp japanese chilli powder (ichimi)
  • 1 tsp Japanese soy sauce

Instructions

  1. Place the stock ingredients, minus the ginger, garlic and spring onions, into a pressure cooker on a 5 minute high pressure function. After five minutes, release the steam, open up the pot and drain. Take all the scum off the top of the meat, fill up with cold water again, add the ginger, garlic and spring onions and put it on a 30 minute high pressure function.
  2. Heat up the ‘Mirin Tare’ ingredients until bubbling and then set aside.
  3. Boil  the eggs for 6.5 minutes in rapidly boiling water.. Place the marinade ingredients into a food bag and add the peeled eggs to the bag. Set aside to marinade.
  4. Quickly mix the chilli paste ingredients and pour hot oil over them to cook and combine.  Finely chop the spring onions.
  5. After 30 minutes open the pressure cooker again and mix the Mirin Tare in. Place on another 1  x 30 minute high pressure function. Once the second thirty minute cycle is over you are ready to serve up. Cook the noodles, then place the shredded meat and broth over the noodles. Top with the chilli paste,  eggs and finely chopped spring onions.
