Ingredients
1 tbsp butter
1 small onion, finely diced
1–2 jalapeños, finely chopped
1 garlic clove, minced
1 tbsp tomato purée
1 tsp smoked paprika
½ tsp ground cumin
Salt, to taste
200g cream cheese, cubed
200g Monterey Jack, grated
100g mature cheddar, grated
150ml milk
150ml double cream
3–4 quartered cherry tomatoes, ¼ finely diced red onion, 1 sliced jalapeño and coriander to garnish
Tortilla chips for serving
Instructions
- Set to Sauté. Melt butter, cook onion + jalapeño for 3–4 mins.
- Add garlic, spices + tomato purée. Cook 30–60 seconds.
- Switch to low Sauté.
- Add cream cheese and stir until melted into a thick base.
- Slowly add milk + cream, stirring until smooth.
- Add Monterey Jack and cheddar gradually, stirring until fully melted and glossy.
- Keep warm in Instant Pot for serving, stir occasionally. Loosen with a splash of milk if it thickens.
- Garnish with some red onion, cherry tomatoes, jalapeños and coriander right before serving
