  • 1 medium courgette
  • 2 tsp kosher salt
  • 1 egg
  • 1 tbsp Water
  • 128 g panko breadcrumbs
  • 100 g Parmesan cheese
  • 1 tsp smoked paprika
  • Dipping sauce of choice


  1. Slice the courgette into 1/8 inch rounds, sprinkle with salt and let stand at room temperature for 10 minutes.
  2. Set up for dredging: Combine beaten egg and 1 tbsp water in a shallow dish. Combine breadcrumbs, parmesan cheese and smoked paprika in a second shallow dish.
  3. Gently blot dry courgette with a towel to remove excess moisture.
  4. Working a few at a time, dredge zucchini slices first in the egg mixture, then place in the breadcrumb mixture and press the crumbs firmly on both sides.
  5. Select Air Fry, and set the temperature to 190°C and the time to 12 minutes, then touch Start to preheat the Vortex.
  6. When the display indicates “Add Food” carefully place the courgette chips into the frying chamber (leave a little space around each one)
  7. Turn the chips when prompted.
  8. When the Air Fry program is complete, remove the courgette chips and serve hot with your choice of dipping sauce.
